摘    要:测定了潮汕地区6 种野菜中硝酸盐、亚硝酸盐和维生素C 的含量. 结果表明, 地肤、杠板归属一级蔬菜可生食、盐渍和熟食; 火炭母和箭叶蓼属于较好的二级蔬菜, 不可生食,可盐渍和熟食; 酸模叶蓼属于三级蔬菜, 不宜生食和盐渍, 可熟食; 番杏属于四级蔬菜, 超出安全食用范围, 但考虑到其Vc 含量较高, 人们食用已久, 因此可以限量熟食, 每天食用0125kg 以下, 不会对健康造成危害.

Abstract:The contents of nitrate, nitrite and vitamin C in leaves of 6 edible wild vegetables from Chaoshan district were tested. The results and conclusions were as follows: Kochia scoparia (L.) Schrad and Polygonum perfoliatum L. belong to the first class edible wild vegetables and they can be eaten anyway(in fresh, after salted or cooked ); Polygonum caespitonsum L.and Polygonum sieboldii Meisn. belong to the second class and they can be eaten by cooked or salted; Polygonum lapathifolium L. belongs to the third class edible wild vegetables and it must be eaten after cooked; Tetragonia teragonioides (Pall.) Kuntze belongs to the fourth class , it must be eaten below 0.25kg a day after cooked.
