对陕西城固产黄色桔皮色素的稳定性进行了研究.研究表明,该色素水溶性好,在pH值2-10时,色素稳定性好.对大多数金属离子作用不显著,色素耐氧化性较差,耐还原性较强;除苯甲酸外,大多数食品添加剂对色素影响不大,在食品工业中有一定的开发利用价值. 相似文献

以龙眼壳为原料提取黄色素,并对该色素的稳定性进行研究.实验结果表明,该色素最佳提取工艺为:提取剂为乙酸乙酯,浸提料液比为1∶30,温度为40℃,时间为3 h.稳定性研究表明,该色素对光、热和还原剂的稳定性良好.食品添加剂和金属离子对色素的影响较小,其中柠檬酸,山梨酸钾对色素有增色效应,因此其用量不宜过多;Fe3+、Zn2+、Al3+对色素影响较大.该色素耐酸、不耐碱,在pH值接近10时,色素明显变色且有少量的沉淀物. 相似文献

以红心萝卜为原料提取了红心萝卜紫色素,并对其理化性质和稳定性进行了研究.结果表明,该色素用蒸馏水浸泡提取,提取率为7.4%.色素的水溶性好,对光、热、弱酸性至碱性介质及食品添加剂相当稳定,耐受一般的食品饮料加工条件.色素对氧化剂和还原剂的耐受能力较弱.红心萝卜紫色素是一种提取工艺简单、性质稳定、颜色鲜艳、价廉易得、来源充足的天然色素,可用于色糖果、面食品、果汁饮料、茶饮料、碳酸饮料及酒类. 相似文献
