光照、温度对亮蓝色素稳定性影响的研究

摘    要:研究了光照、温度及酸度等因素对食用合成色素亮蓝稳定性的影响.研究表明:亮蓝色素的酸稳定性较好,在pH=2~9的范围内能稳定保存;耐热性较好,温度对其稳定性基本没有影响;暗处放置有利于色素的保存;金属离子K 、Na 、Mg2 、Al3 、Mg2 、Zn2 与其共存,稳定性较好;Fe3 和Cu2 的加入,会使亮蓝色素溶液变色,生成难溶物;食品中只能添加微量的Fe3 、Cu2 .

Abstract:The stability of brilliant blue FCF pigment has been studied by ultraviolet-visible absorption spectrum,including the factors of pH value of edible acid,thermostability and photostability in this paper.The results showed that acidity has almost no influence to the stability of brilliant blue FCF pigment.The stability of brilliant blue FCF pigment is the best when pH=4.4 and the temperature has little influence.Micro-metallic element and different kinds of edible acid in the system have no adverse effect on the pigment.However,the direct and natural sunshine can damage the pigment obviously.
