| 摘 要： | 本文就HACCP课程的特点以及教学中应着重理解和掌握的原则与实施方法进行了阐述,对高校HACCP原理课程目前教学上存在的问题进行了分析,并提出了解决方法,目的是使食品专业大学生能够充分了解HACCP的基本原理,掌握食品生产安全的控制技术,并能切实在实践应用中重视食品安全的利害关系,从而增强食品专业大学生的食品安全观念。
