| 摘 要： | 高校旅游饭店专业餐饮管理课程实践教学体系中存在一定的缺陷,主要是追随着传统的本科教育的教学体系,课程实践教学体系的建立与本科层次不对应,人才培养模式与餐饮行业对人才的要求存在一定的差距。文章试图建立旅游高等本科教育的"餐饮管理课程实践教学体系的三维架构",即协作式餐饮企业调研实践、信息化餐饮管理实验平台、即景式餐饮服务操作实验,突出餐饮行业管理服务人才培养的适用性,并提出了相应的措施。

| Abstract: | This paper explained how to establish a theory called "restaurant management courses experimental three-dimensional structure of the education system" for the tourism of undergraduate education,which means a collaborative restaurant research,information restaurant managerial platform,exfempore experimental operation of catering services.It highlights the education for talents of management and service and also presented to some measures. |
