摘 要: | 通过文献了解现今对于膳食纤维提取的几种基本方法,采用酸、碱法对柚子皮中的膳食纤维进行提取,并用正交试验得到碱浸过程中对于柚子皮膳食纤维提取的最佳条件:温度35℃、时间1.5h、物料比1(g)∶9(mL)、NaOH浓度0.4 mol/L,此条件下产率为51.85%.最后对得到的柚子皮膳食纤维的持水性以及膨胀性进行测定,得出其持水力和膨胀力分别为2.823 g/g、3.19 mL/g.

Abstract: | Through studying literature, the current methods of extracting dietary fiber were analyzed, and acid-alkali method was adopted in this study. The orthogonal experiment was then conducted to get the optimum condition to extract pomelo peel dietary fiber: temperature 35 ℃, time 1.5 h, material ratio 1(g) : 9(ml) and concentration of the lye 0. 4 mol/L. Under this condition, the yield was 51. 85%. Finally, water holding capacity and expansion capacity of the dietary fiber were calculated and they were 2. 823 g/g and 3.19 ml/g respectively. |
