小麦胚生物活性肽产品开发研究进展

摘    要:小麦胚芽中不但富含维生素E、维生素B等多种B族维生素,还含有膳食纤维、矿物质和活性多肽等生物活性物质,已成为当前食品工业中新产品开发的重要方面.本文阐述了小麦胚生物活性肽的营养价值和小麦胚多肽产品的开发研究现状.旨在为进一步开发小麦胚多肽产品提供参考.

Abstract:Wheat germ is one of the main by products of wheat-milling industry.It is a rich source of Vitamin E,Vitamin B group Vitamins,proteins,dietary fiber and minerals.It has become an important aspect of new products development in Food industry.In this view,the research progress about protein in wheat germ were summarized.
