杏鲍菇红枣复合运动饮料的研制

摘    要:以杏鲍菇和红枣为主要原料,对杏鲍菇与红枣复合运动饮料的加工工艺进行了研究,并制定了质量标准;在单因素试验的基础上,通过L9(34)正交试验,确定复合运动饮料的配方.结果表明:杏鲍菇红枣复合运动饮料的最佳配方为:杏鲍菇提取液60 mL,红枣提取液50 mL,白砂糖50 g,柠檬酸0.4 g,黄原胶0.2 g(以饮料体积500 mL计).据此研制出的饮料富含营养,适合运动人群饮用.

Abstract:Taking Pleurotus eryngii Quel and Zizyphus jujuba Dates as the main raw material,the processing technology of compound health beverage of P. eryngii Quel and Z. jujuba Dates was studied,and the quality standard was established,too.The best formula of compound health beverage by using L9 (34) orthogonal experiment based on mono-factor were shown as follows:P. eryngii extract 60 mL,Z. jujuba extract 50 mL,sugar 50 g,citric acid 0.4 g, xanthan gum 0.2 g (as 500 mL).Under the above conditions,the processed beverage was full of nutrition and suitable for sports people.
