黄曲霉毒素脱毒方法研究进展

摘    要:黄曲霉毒素(Aflatoxin,AFT)是一种毒性极强的剧毒物质.黄曲霉毒素污染的问题已是食品卫生工作中的一个世界性的重要课题,20世纪60年代以来黄曲霉毒素的防治与脱毒备受人们关注.传统常用的理化脱毒法存在着破坏饲料营养成分、对动物体造成毒害、脱毒效应不高、成本昂贵、给环境带来二次污染等问题.相对而言,生物技术脱毒法主要是通过破坏、修饰或吸附真菌毒素,从而达到减少或消除毒素的目的,具有高度的专一性、对饲料和环境无污染、不造成营养损失、能够避免毒素的重新产生等优势.

Abstract:Aflatoxin (Aflatoxin, AFT) is a highly toxic substance and contamination of aflatoxin has become a very important problem related to food safety in the world. Since 1960s, how to prevent and detoxify aflatoxin is drawing much more attention. Conventional physicochemical detoxification method has a series of problems such as nutrients destruction, toxic for animals, low detoxification effect, high cost, environmental pollution and etc. Biotechnological methods of detoxification could reduce or eliminate toxins through destruction, modification, or adsorption of mycotoxins. So it has much more advantages such as high degree of specificity, no contamination of food and the environment, no nutrients damage, avoidance of re-production of toxins and etc.
