| 摘 要： | 明清时期的济宁不仅是运河沿岸重要的商业都会,同时也是饮食文化和饮食业极为发达的地区。当时的济宁城内大型酒楼和饭馆林立,小型饭馆和食铺更是不胜枚举。由于茶叶贸易的发展,各类茶馆随处可见,得益于便利的水路交通,酱菜业和酿酒业也有显著发展。济宁饮食业的繁荣主要得益于本地商品经济发展所带来的充足的原料供应和巨大的市场需求。其发展变化与运河漕运的兴盛息息相关,其饮食业的发展状况成为明清时期山东运河沿岸城镇饮食业发展的缩影。

| Abstract: | Jining was not only an important commercial city along the canal,in the Ming and Qing Dynasties,but also an area where diet culture and catering industry were extremely developed.At that time,there were many large boites and restaurants in Jining’s City,and small restaurants and food shops were numerous.Due to the development of tea trade,various teahouses can be seen everywhere.Thanks to the convenient waterway transportation,the pickles industry and the wine industry have also developed significantly.The development of Jining’s catering industry is mainly due to the abundant raw material supply and huge market demand brought about by the development of local commodity economy.Its development and change are closely related to the prosperity of the canal transportation.The development of the catering industry has become the epitome of the development of the catering industry along the Shandong Canal in the Ming and Qing Dynasties. |
