摘    要:维生素C又称坏血酸是人类营养中所需要的最重要的维生素之一,缺乏维生素C会产生坏血病。本文利用“2,4-二硝基苯肼法”测定抗坏血酸在马齿苋、面条菜、蓬蓬菜、山芹菜、猫耳菜中的含量。结果表明在五种野菜中猫耳菜和面条菜中含抗坏血酸最多,其次是蓬蓬菜和山芹菜,马齿苋中抗坏血酸含量最少。

Abstract:Vitamin C namely ascorbic acid is one of the most important nutrient of manking and the lack of it may lead to scorbutus.In this paper,the content of vitamin C in some edible wild herbs such as Portulaca oleracea,Noodles greens,Penglai greens,Mountain celery and Maoer greens was detected with 2,4-nitrophenylhydrazine spectrophotography.It was showed that the content of ascorbic acid in Noodles greens and Maoer greens is larger then that in Penglai greens,mountain celery,and that in Portulaca oleracea is the lest.
