| 摘 要： | 顶岗实习是高等职业教育实践教学体系的重要环节,大部分高职院校采用毕业前集中顶岗实习模式。针对食品发酵企业季节性、阶段性和周期性的生产特点,实施分阶段顶岗实习模式,使学生顶岗实习和企业生产同步进行;借鉴现代质量管理理论的思想和方法,将ISO9000质量管理和危害性分析与关键点控制(HACCP)2个体系引入到顶岗实习管理中,成功地构建了高职学生顶岗实习质量控制体系。该体系包括组织制度、过程管理和监控反馈3部分。实践表明,该模式有利于密切校企合作、增强实习岗位对口性,实现了顶岗实习的精细化管理,提升了学生职业岗位能力,提高了毕业生就业率。
