壳聚糖对苹果酒澄清作用的研究

摘    要:通过测定壳聚糖澄清前后苹果酒主要成分含量的变化,研究壳聚糖对苹果酒的澄清作用。结果表明:壳聚糖处理后可溶性固形物没有变化,总糖、总酸度、有效酸度等都有不同程度的下降,且苹果酒内的菌数也有所下降。当壳聚糖用量达到0.004g/mL,温度在30℃,作用时间为24h时对苹果酒的澄清效果最好,壳聚糖的应用可以有效地提高苹果酒的澄清度,抑制苹果酒内的菌数,且壳聚糖对苹果酒的澄清作用效果明显优于明胶,说明壳聚糖是一种良好的苹果酒澄清剂。

Abstract:A study on clarification effect of chitosan on Cider was presented. The conent of main compositions in Cider before and after the treatment with chitosan had been investigated. It showed that the absobancy index at 450nm and the transmttancy at 720nm could be the guide line of Cider. After the treatment with chitosan the main contents of soluble soulds, total sugar, total acidity, effective acidity and fungus number were all reduced differently. The best clarification effect was reached when the concentration of chitosan was 0.004g/mL, the temperature was 30℃, and acting time was 24h. Chitosan was an effective clarifier, it could improve the light t .ransmittance and inhibit the fungus number of Cider, and the clarification effects were much better than that of gelatin. It shows that chitosan is a good wine clarifier.
