微波萃取法生产速溶茶粉的研究

摘    要:采用微波法以茶叶末为原料制备速溶茶粉,提取茶叶末中水溶性物质并进行调配.研究了微波功率、浸提时间、乙醇浓度、料液比、浸提次数对速溶茶得率和品质的影响.研究结果表明该工艺用时短、得率高、易于工业化.采用微波萃取的最佳条件为:功率为640W,时间为120~150s、料液比为1∶15,乙醇浓度为50%,浸提两次.

Abstract:This article introduces the technique of producing quick-dissolving health care tea which is chisty tea.Microwave extraction method is used to extract water-soluble substance.Specific researches are made to find the influence of microwave power,extraction time,alcohol thickness,rate of material and solution and extraction times on obtainment percentage and quality.The result indicates that the technique needs shorter time,has higher obtainment percentage,and is easier to industrialize.The best technological conditions are:microwave power 640W,extraction time 120~150 seconds,rate of material and solution 1∶15,alcohol thickness 50%,extraction times twice.
