摘    要:以新鲜猪肉制品为研究对象,采用图像处理技术检测猪肉在常温下氧化腐败过程中颜色的变化,并使用半微量定氮法与之对比.结果显示:猪肉在腐败过程中,RGB颜色空间变化不明显,HSI颜色空间变化明显;与传统的化学方法检测相比,利用图像的颜色模型可以更加方便快捷的检测猪肉的新鲜程度.

Detection of the Freshness of Pork Based on Color Space

Abstract:Detected on the fresh pork, it proposes a pork freshness detection method based on the color model of the image ( HSV, RGB) by using the image processing technology to detect the specific color change of the fresh pork in the process of oxidation corruption. It is contrasted with using semi - micro determination of nitrogen. The resuits showed that it can detect obvious change by using color model. It can detect the fresh pork more convenient which compared with traditional chemical method. So we can be try to use the image color model to check pork freshness.
