摘    要:对大葱抗氧化性能进行测定.亚铜离子和过氧化氢反应产生羟基自由基,当加入大葱样品时,羟基自由基和水杨酸反应产物的荧光强度发生变化,用荧光分光光度法测定大葱样品对羟基自由基的清除率.结果表明,大葱具有较强的抗氧化性能.

Abstract:The antioxidation effects of Allium sativeum from different districts are studied.Hydroxyl radicals produced by sub copper ion react with H2O2,then hydroxyl radicals react with salicylic acid the intensity of fluorescence is changed when the Allium sativeums are added into the system.The changes of the hydroxyl radicals are determined by fluorimetry.The results indicate that the Allium sativeums from different districts have antioxidative effect and the change of antioxidative effect for Allium sativeum with different districts.
