| 摘 要： | 《食品工程原理》是食品科学与工程专业的一门重要的专业基础课,其教学质量直接影响着整个专业的教学质量.经过对多届学生的教学尝试,大胆地进行了该课程教学模式及教学方法的探索,总结出适合高职教育特色及学生情况的《食品工程原理》教学模式及方法.

| Abstract: | The Principal of Food Process is one of the most important basic technological subjects, which teaching quality has direct effect on the whole courses. This paper established a reasonable and practical teaching model, and studied the systematic teaching method by three years research on practical teaching of this subject. |
