摘    要:以自制豆豉为原料,比较不同前处理方法对豆豉中Mn、Cu、Fe金属元素测定结果的影响。利用干法灼烧灰化、常规湿法消解和微波消解处理样品,用原子吸收光谱法测定样品中Mn、Cu、Fe的含量。3种消解方法处理的样品中Fe的含量较高,其次是Mn,再次是Cu。试验结果表明,三种消化方式都适合处理豆豉样品,其中又以微波消解最好。

Abstract:To determine the influence of different pretreatment method on the contents of Mn, Cu and Fo in the fermented soybean, when self-restraint fcrmented soybean was used as raw materials.Method] Three different methods, including dry ashing, conventional wet digestion and microwave digestion, were used to treat the sample. Atomic absorption spectrometry was used to test the contents of Mn, Cu and Fe in the sample. Result] For three kinds of digestion methods, Fe content was highest in the sample, followed by Mn and Gu. The result suggests that fermented soybean could be well treated by three digestion modes, among which microwave digestion was best.
