利用纤维素酶降解水溶性壳聚糖的研究

摘    要:通过对溶液还原糖浓度以及粘度的测定研究了纤维素酶对壳聚糖的降解作用,探讨了酶解过程中温度、pH值以及反应时间对纤维素酶降解壳聚糖的影响,对降解前后壳聚糖的结构进行了表征并对其水溶性进行了测试。结果表明:纤维素酶降解壳聚糖的最佳pH值为4.5,温度为50℃。随着反应时间的延长,壳聚糖溶液的黏度逐渐降低;随着壳聚糖分子量的降低,水溶性增强,其化学结构没有改变。

Abstract:In this article,the degradation of chitosan with cellulose was sutdied by determining the concentration and viscosity of reducing sugar in solution.The influence factors of degradation reaction were discussed,such as temperature,pH and reaction time of degadation process.The structure of chitosan before and after degradation was characterized,then the water-solubility was tested.The results showed that:the optimum reaction temperature of degrading water-soluble chitosan by using cellulose was 50 ℃,pH was 4.5.As a result,viscosity of chitosan gradually reduced with the extending of reaction time.Water-solubility of chitosan was enhanced when its molecular weigh was reduced.The chemical structure of chitosan wasn't changed in the degrading process.
