食品是用营养丰富的动植物原料经过人工加工后的制成品，其种类繁多，主要有面包、糕点、糖果、罐头、饮料、蜜饯和调味品等。作为食品，应该含有人体所需的热量和各种营养物质，易于消化吸收。且必须具有符合人们习惯和易于接受的色、香、味、型和组织状态，对人类无害。但食品往往由于受物理、化学和生物各种因素的作用，在原有的色、香、味和营养等方面发生量变，甚至质变，从而使食品质量降低甚至不能作为食品用，这就是食品的腐败变质，其中由微生物污染所引起的食品腐败变质是最为普遍的因素。食品保鲜最重要的就是要防止微生物污染，防止食品的腐败变质。 相似文献

一、引言
